Our office in the 600102 zip code is usually filled with rolls of blueprints and sketches for kitchen layouts. We aren't a hotel ourselves; we spend our time thinking about how other hotels and restaurants should be built. It’s a lot of measuring and figuring out where the ovens should go so the chefs don't bump into each other. The space here is a bit cluttered with samples of floor tiles and hardware catalogs. We’ve been in this part of Chennai for quite a while, and the neighbors know us as the people who are always arguing over where a sink should be placed. Sometimes it gets a bit dusty with all the paper moving around, but we manage. We don’t have a fancy front desk or anything like that. Usually, you’ll just find a couple of us hunched over a desk with a cup of coffee that has probably gone cold. People come to us when they are starting a new food business and don't know where to begin with the technical side. We just look at the floor space and tell them what will fit and what won't. It is practical work that keeps us busy from Monday to Saturday, and we like the neighborhood.
