Khajees Appalam

At No. 70 Palayampillai Nagar, you’ll find us at Khajees Appalam. It’s a home-grown sort of setup. The smell of the ingredients is usually the first thing people notice when they get close to the building. We’ve been doing this for a long time, and the process hasn't changed much since we started out. It’s a lot of manual work. We spend our mornings preparing and the afternoons making sure everything is just right. Palayampillai Nagar is a quiet residential area, so we try not to make too much noise. Our neighbors are all used to us being here and they are good folks. We don't have a big factory or a fleet of trucks. It’s a small operation run by people who care about what they’re doing. Sometimes the rain messes with our schedule, and we have to wait for things to dry properly before we can finish. It’s frustrating, but you can’t fight the weather. We don't do much in the way of fancy packaging or big ads. Most of our customers are people who have been buying from us for years. They know what they’re getting because we’re the ones doing the work ourselves every day. It’s not a glamorous life, but it’s a good one. We get to talk to people from the neighborhood and be part of their lives in a small way. That’s enough for us. Just hard work and a simple product that people like. We're happy here.
