Khosla Cuisines Private Limited operates out of Sector-37C in Chandigarh. Our place at number 2430 is usually smelling like spices and fresh dough by ten in the morning. It’s a busy kitchen, and there’s always a bit of chaos when the lunch rush starts. We aren't a big fancy hotel kitchen; it’s more about getting the food out hot and making sure it tastes like it should. The staff is mostly local people who’ve been with us for a while. We spend a lot of time cleaning up, which is the part of the food business no one really talks about. There’s always a sink full of pots or a floor that needs another scrub. We don't have a big marketing department or a glossy brochure. Mostly, people find out about us because they live nearby or they’ve seen our delivery bikes zooming around Chandigarh. It gets pretty hot in the kitchen during the summer months, but we just keep the fans going and stay hydrated. We try to keep our recipes consistent, even when ingredients change with the seasons. It’s a lot of physical work, standing on your feet for ten hours, but seeing a clean plate come back makes it feel okay. We’re just a regular group of folks trying to make a living by feeding people decent food every day. That’s about it for us. We just keep our heads down and cook.
