Sweets & Namkeens

We’ve been here in Karol Bagh at 2695 for quite a while now. Most mornings start pretty early, around 6 am, when the first batches of namkeen go into the big fryers. You can smell the spices all the way down the street if the wind is blowing right. It’s a busy spot, especially when the market really gets going in the afternoon. We mostly just focus on getting the snacks right, making sure the mathri is crunchy and the sweets aren't too sugary. Sometimes it gets a bit chaotic behind the counter when ten people are asking for different things at once. We don't have a big team, just a few of us who know the routine. My father started this and now I handle the day-to-day stuff with a couple of helpers. People come in for their evening tea snacks or to pick up a box of laddoos for a small function at home. It’s nothing fancy, just a regular shop with stacks of containers everywhere. The shelves are usually full by midday. We try to keep everything fresh because the humidity in Delhi can ruin a good batch of sev pretty quickly. If you walk past the shop, you’ll see the glass displays filled with whatever we made that morning. It’s loud, it’s crowded, but that’s just how Karol Bagh is. We just keep our heads down and keep the trays moving. It’s a simple life selling snacks to neighbors.
