We've been here on NH-89 in Nokha for a while now. It's a dusty stretch of road usually, with a lot of trucks passing through Bhamatsar. Most days start early before the sun really gets hot, which in Bikaner is saying something. We spend a lot of time just cleaning up the place because the wind blows the sand in through every little gap. My family helps out with everything, from the kitchen to the billing. It’s not a fancy setup, just some tables and chairs and a kitchen that stays busy during lunch and dinner. Sometimes the electricity goes out and we just sit outside for a bit. People stop by when they’re driving between towns, looking for a place to sit down for an hour. We know most of the regulars, guys who drive the same routes every week. It gets loud when the lunch rush hits, everyone talking over each other. Then it goes quiet again in the afternoon. We mostly just focus on getting the food out on time and keeping the place running. The building itself has been here quite a few years and needs a bit of paint every now and then. We don't have a big team, just a few local guys who’ve been with us since the start. It's a living, and it keeps us busy from morning until late at night. Sometimes the weather is nice, but mostly it’s just hot and dry.
