Zayakedar is our little corner at 18/1 B in Bellandur. If you know this area, you know how crazy the traffic can be, especially in the evenings. We are right in the middle of it all. The shop is quite narrow, so we had to be clever with how we put the counters and the stove. I’ve always been obsessed with flavors, which is why we chose a name that means tasty. I spend a lot of time experimenting with different spice blends in the back. My hands usually smell like garlic and coriander even after I scrub them. We don't have any fancy waiters; you just come up to the counter and tell us what you want. It’s faster that way. The ceiling fan makes a clicking noise on the high setting, which used to bother me, but now I don't even hear it anymore. We get a lot of office workers from the nearby tech parks who are tired of the food in their canteens. They come here for something that feels more like home cooking. We don't use any preservatives or weird additives. It’s just basic ingredients and a lot of patience. Sometimes the rain floods the street out front, and we have to put out sandbags, but we rarely close. We just keep going because we know people are counting on us for their dinner.
