Up at 1219 Srinivasnagar, you will find us working away at Supradeepa. This is where Vinayaka Catering is based, and it’s usually a hive of activity from early morning until late at night. The building isn't huge, so we have to be very smart about how we store our sacks of grain and the big stacks of plates. You can usually smell what we are cooking from the street, which I guess is a good thing for the neighbors. We don't have a marketing team or a fancy website. It’s just us in the kitchen, making sure the sambar is thick enough and the rice is fluffy. Working in catering means your schedule is never really your own. If someone has a function on a Sunday morning, we are here on Saturday night prepping everything. It’s a lot of manual work, like scrubbing giant cauldrons and peeling kilograms of potatoes by hand. The floors are often wet from being washed down, and there’s always a stack of crates waiting to be loaded onto a truck. We’ve grown accustomed to the noise and the constant rush. Srinivasnagar is a nice enough place to work, even if the parking around Supradeepa can be a real headache sometimes. We just focus on the food and try to get every order out of the door without making a mess of things. It’s a simple, honest way to make a living for all of us involved here. We just take it one day and one meal at a time.
