Our shop is in Shivaji Nagar on Kirtistambh Road. It’s a very busy part of town with a lot of people walking by all the time. The smell of the kitchen usually travels down the street, which is how most people find us. We have a small kitchen area where we do all the cooking on big burners. It gets very hot in there, especially in the summer months. We have a few staff members who have been with us for years and they know exactly how I like things done. Sometimes we run out of ingredients because the delivery truck got stuck in traffic, which is common around here. We just make do with what we have. The tables are simple and we use paper napkins. It’s not a place for a fancy date, but it’s good for a hearty meal. We stay open quite late because the street stays active until midnight. I usually sit near the door to greet people and handle the cash. The noise from the honking cars outside is something you just get used to after a while. We don't have any big signs or neon lights, just the name above the door. Most of our customers are people who live nearby or work in the local shops. It feels like a small community inside even when it's chaotic outside. We just keep cooking and serving every day until the gas runs low. The street lights outside flicker sometimes but our kitchen stays bright.
