Our kitchen is tucked away on 2nd Main Road in Khadi Layout, right near Kathriguppa Main Road. It’s always a bit chaotic here in the mornings when we start prepping the day’s orders. We’ve been at this No. 9 spot for a long time, so most of the neighbors know the smell of our cooking by now. It’s not a quiet job. There is a lot of chopping, washing, and heavy lifting of big metal pots. We spend most of our time in the back making sure the stoves are going and the supplies are fresh. Sometimes the delivery vans have a hard time navigating the narrow turns around here, especially when the main road gets backed up with traffic. We don't really do anything flashy. It's just us in our aprons, working through the list of what needs to be cooked for the day. My brother handles the deliveries and I stay back to manage the kitchen staff. We get a lot of people from the local area coming by to ask about menus. The building itself is nothing special, just a functional space where we can get the work done. We try to stay organized, but when there are three big events on the same day, it gets pretty loud and crowded in here. That’s just the way the catering business works in this part of Bangalore. We just keep our heads down and cook. It is messy and loud, but it is what we do.
