We set up shop every morning here at number 28 in Dal Bajar. It is right inside the Dharam Market area of Basavanagudi. If you know this part of town, you know it gets very crowded with people shopping for groceries and clothes. We start our day early by getting the vegetables delivered. We spend a lot of time slicing cucumbers and tomatoes on a small wooden board. Our counter is made of metal and it gets quite hot in the afternoons. We don't have a fancy kitchen with big ovens. It’s just us with a toaster and a few knives. The bread comes in fresh every day from a local bakery nearby. We stack the loaves high on the shelf behind us. Sometimes the market noise is so loud we have to lean in to hear what people want. We don't have a printed menu with pictures. Most people just ask for what they usually get. We use a lot of butter and green chutney that we make ourselves. The floor is just plain concrete and we sweep it whenever there is a quiet moment. We’ve been in this spot for years and the walls could use a bit of paint. But we are too busy making sandwiches to worry about that. People stand around the stall while they eat and then move on. It is a simple life and we like being right in the middle of the market action. We just keep making the sandwiches one by one until the bread is gone.
