South Thindis

Our place is over in Basavanagudi, right around the 41466 area. We open up pretty early in the morning because that is when people want their breakfast. You can usually hear the shutters going up around 6 AM while the rest of the street is still mostly quiet. The kitchen gets hot fast once the stoves are lit. We spend a lot of time grinding the batter and making sure the sambar smells right. It’s a small space so things can get a bit cramped when the office crowd shows up. We have a few regular tables and some people prefer to just stand and eat quickly. Sometimes the electricity goes out for a few minutes and we have to use the backup lights, which makes the atmosphere a bit dim. My brother handles the billing while I look after the kitchen staff. We don't use a lot of complicated machines here, just the basic stuff that has worked for years. The floor is old tile and it shows its age, but we keep it clean. You’ll find us near the main junction. It’s not the quietest spot but we like the energy of the morning rush. We don’t do anything too different from the other shops nearby, we just try to get the food out hot and on time. If we run out of something, we just put a small sign up. It’s a straightforward way to run a business. We mostly just focus on the morning coffee and idlis.
