Shwetha Catering Service operates out of 38 Sampangiram Nagar. The kitchen gets hot by six in the morning. We spend a lot of time chopping vegetables and getting the rice ready. It’s a small place but it works for us. The neighbors know us by the smell of the tadka hitting the oil. We don’t have a big office or anything, just the cooking space and some room for the vessels. Moving the heavy containers into the vans is a daily workout for the guys. Sampangiram Nagar is a crowded part of town, so parking is always a headache. We usually have to juggle things around. Sometimes a delivery driver gets lost and calls ten times. It happens. We just try to keep things moving. There’s always washing up to do, piles of it. We use a lot of water and heat. It’s a messy job, really. You end up with flour on your clothes or turmeric stains. People come by to talk about their events, sitting on the plastic chairs we keep in the corner. We write everything down in a big ledger. It’s not digital or fancy. We just keep track of what needs to be cooked and where it needs to go. Sometimes we run out of gas and have to wait for the cylinder guy. That’s just the routine at Shwetha Catering Service. We keep the counters scrubbed down and the knives sharp. It's just a lot of physical labor.
