Sankalp Food Zone

Our shop is at No. 2 in R.R Chambers on the ground floor of the 2nd Main. It’s a handy location for the people who work in the office buildings around here. We open up early to get the first batches of food ready for the breakfast crowd. The morning air is usually a bit cool, which is nice because once we turn on the grills and the stoves, the temperature inside goes up fast. We spend a lot of time wiping down the counters and making sure the benches are ready for the lunch rush. Since we are on the ground floor, we see everyone walking by to their offices. You start to recognize the regulars after a while, even if you don't know their names. They usually want their food fast so they can get back to work. We don't have much space for sitting around, so it’s a lot of stand-up eating or take-away parcels. By mid-afternoon, things slow down a bit and we can finally take a break ourselves and have a cup of tea. That’s when we do the deep cleaning of the floors and the kitchen equipment. It’s not a glamorous job, and the hours are long, especially when we have to stay late to prep for the next morning. We just try to keep the food simple and the place tidy for whoever walks in. It’s a lot of work but it keeps us going throughout the long weeks.
