You can find us at No.37 on 11th Cross in Vayalikaval. Malleswaram is one of those places where everyone seems to know where everything is, and we’ve been part of this neighborhood for a long time. Our daily routine is pretty much set in stone. We wake up, check the lists for the day’s orders, and get the kitchen fires going. There’s something about the air in Malleswaram in the morning, it’s quiet before the shoppers arrive. We do a lot of traditional cooking here. It’s not just about the recipes, it’s about how long you simmer the dal or how you grind the masala. We use a lot of heavy brass and steel vessels that have been around for years. Cleaning them is a job in itself. The 11th Cross can get a bit tight with parking, so we’re always shuffling our delivery scooters around to stay out of the neighbors' way. Sometimes we’re working on three different events at once, which means the kitchen gets pretty loud with everyone shouting instructions over the noise of the grinders. We don't really do much advertising; people usually just hear about us from someone else in the area. It’s a tiring business and our backs usually ache by the end of the day, but seeing the empty pots come back makes it feel okay. We just keep the kitchen clean and the fires burning for the next set of orders we have to finish.
