We are situated in Banaswadi, Sec 34C, at house number 2. It’s a residential area mostly, so we get a lot of neighbors coming in. We only do vegetarian food here, so the kitchen is full of vegetables and grains instead of anything else. We spend a lot of time chopping onions and tomatoes and sorting through the lentils to make sure there are no stones. The dining area has several tables with plain cloths on them, and we try to keep them neat, though things get messy during the dinner rush. We have a couple of large ceiling fans that creak a little bit as they spin, but they keep the room cool enough. Most of the people who work here live nearby, so it feels like a familiar place for everyone. We don't use any fancy techniques, just the ways of cooking that we’ve always known. Sometimes we have to tell people that a certain dish will take longer because we have to make it from scratch. We have a small sink near the entrance for people to wash their hands, and we keep the soap dispenser filled up. It’s a quiet life for the most part, just cooking and cleaning and making sure the lights are turned off at the end of the night. It’s a straightforward business in a nice part of town. We usually spend the last hour of the day checking the pantry for what we need tomorrow.
