Our spot, Saaga Veg, is located at No.19/3 in the Abhishek Hotel building on Kumara Krupa Road. This part of Bangalore is always moving, especially being on Race Course Road. It’s a busy intersection and there’s never a moment of silence with all the cars and bikes going by. We get into work early to beat the worst of the traffic. The kitchen is compact and we have to be careful not to bump into each other when things get hectic during lunch. We’ve been at this location for a while now, and the routine hasn't changed much. We prep the vegetables, boil the rice, and wait for the first group of people to walk in. It’s a lot of repetitive work, but it keeps us busy. The hotel guests sometimes come down to eat, and then we have the regulars who work in the offices nearby. We don't have a lot of fancy equipment, just the standard stoves and pots. Sometimes we run out of something and have to send someone out quickly to the market. Bangalore weather is usually okay, but the rain can make things messy at the entrance. We spend a lot of time cleaning the floors because of all the foot traffic. It’s not a glamorous life, but it’s what we do. We don't put much thought into the "about us" side of things usually, we’re too busy making sure the food is ready on time.
