Roti Special is at Whitefield 19. Whitefield has become so crowded now with all the big buildings, but we are in one of the older parts. We focus mostly on different kinds of rotis and breads. It’s a small kitchen and a small seating area. Most of our customers actually take the food to go because they work in the offices nearby and want to eat at their desks. I started this place because I noticed nobody was doing simple rotis like home. We have a big tandoor oven in the back that stays hot all day. It makes the whole place smell like toasted flour. My hands are usually covered in a bit of white dust by noon. We don’t use any machines to mix the dough, we do it all by hand in big metal bowls. It’s hard work and my back hurts sometimes, but it’s what we do. We don't have a fancy sign, just the name painted on the board out front. People find us by word of mouth mostly. We don’t spend money on flyers or anything like that. If the food is okay, people come back. That’s my philosophy. It’s just me and a couple of helpers. We try to keep the prices fair so people can come every day if they want to. We stay open until the dough runs out, which is usually around eight or nine at night.
