Rolls On Wheels

We are located at Lalbaug number 1 in the J P Nagar area. It’s a small shop right on the corner where two busy streets meet. We spend most of our time standing in front of the big flat griddle. The heat can be quite intense during the middle of the day, but we’re used to it. We start by kneading the dough for the wraps in large plastic tubs. The chicken and vegetables are chopped up fresh in the small space we have in the back. We don't have any fancy machines to do the work, it’s all done by hand with sharp knives. The counter is stainless steel and we’re constantly wiping it down because things get messy fast. People usually line up on the pavement outside. There are no tables inside, so it’s strictly a walk-up kind of place. We use a lot of oil and spices, so the air always smells like fried onions. Sometimes the power cuts out and we have to use flashlights to see what we’re doing, but we don't stop cooking. The neighborhood is full of energy and we get all sorts of people, from kids coming back from school to folks finishing their night shifts. We wrap everything in thin paper and hand it over quickly. It’s a fast-paced environment and we enjoy the rush of the evening crowd. We don't have a lot of time for chatting but we try to be quick with the orders. It’s just us doing our thing on the corner.
