Things stay pretty busy at Rajdhani over here in Koramangala VI Block. Being in this part of Surat Ho means there’s always people walking by, looking for something to eat. We open up early to get the kitchen ready. There is a lot of prep work involved, mostly cutting vegetables and getting the dough ready for the day. Our staff is a small group, mostly folks who have worked in kitchens for years. We don’t really go for anything flashy in terms of the decor. The tables are basic, and the plates are heavy. Sometimes it gets a bit chaotic during the lunch hour when the office crowd pours in all at once. You’ll hear the clatter of stainless steel and the sound of people talking over their meals. We just keep our heads down and keep the food coming out as fast as we can. It’s not a quiet place, that’s for sure. On some days, the heat in the kitchen gets to be a lot, but we just open the back door and keep moving. We’ve had the same routine for a long time now. People know where we are, right in the middle of the block. We don’t change much about how we work because the old way seems to work just fine for everyone who comes through our doors. It is just a regular daily grind for all of us and we are okay with that.
