Our place is No.157 on 1st Cross Rd, over in the 5th A Main of BTM Layout 1st Stage. BTM is a very crowded place with a lot of young people and students living nearby. Our street, the 1st Cross, is always full of bikes parked everywhere. We operate from a small ground floor space. It’s where we do all the prep work and the cooking. The 5th A Main is a busy stretch, so there is always noise coming in from the window. We don’t have a professional decorator, so the inside just looks like a working kitchen with shelves and boxes everywhere. We buy our vegetables from the local market nearby every morning. It’s a lot of walking and carrying things back and forth. We don’t use any big words to describe what we do. We just make food and try to keep everything clean. Some days the sink gets clogged or the gas delivery is late, and we just have to figure it out. It’s not a perfect setup, but it’s ours. We have been in BTM Layout for a while and we know the shortcuts to avoid the traffic. Most of our time is spent on our feet. We don’t really have time for sitting in an office or doing paperwork. It’s just honest, everyday work.
