We are based in Yeshwantpur at number 765. Being near the station means we see a lot of people who are just passing through. They are usually in a hurry to catch a train or get to work. Because of that, we have to move fast. The plates are stainless steel and we wash them constantly in the back. There is a specific rhythm to the kitchen here that only comes from years of doing the same thing. The floor is made of stone and stays relatively cool. We serve everything on the menu until it runs out, then we just cross it off the list. Some days are much busier than others, and we never really know when a big group will walk in. I spend a lot of time checking the stock in the pantry to make sure we don't run out of rice or lentils. The fans on the ceiling are old but they still work okay. We don't have air conditioning, so the windows stay open to let in the breeze and the street noise. It’s a plain place with no decorations on the walls. We focus on the food and getting people fed so they can get on with their day. My uncle started this place a long time ago and not much has changed since then. It’s just a reliable spot for a veg meal in a busy part of the city. We sweep the floor every few hours to keep up.
