Our place is at number 4 near the Bangalore GPO. Being so close to the main post office means we see a lot of different people every single day. The building we are in is quite old and has high ceilings. We keep the walls white and the furniture is mostly dark wood. It’s a simple look because we don't want things to feel cluttered. In the kitchen, we have a couple of big burners and a lot of pots and pans. We do most of the cooking ourselves and don't hire any big catering companies. The morning starts with us going to the local market to see what vegetables look good. If the spinach isn't fresh, we just don't make the spinach dish that day. We write the daily specials on a small board near the entrance. Sometimes my handwriting is a bit messy and people have to ask what it says. The floor is made of old tiles that are a bit chipped in the corners. We’ve thought about replacing them, but they have a lot of history. When the lunch hour hits, it gets very loud with the sound of plates and people talking. We don't have any soft music playing to drown it out. It’s just a real place for people to get a meal. We spend the slow hours of the afternoon prepping for the next crowd and checking the spice jars. We don't do anything fancy with the plating or the service. It’s just food served in a simple way.
