Our place is tucked away on Muniswamappa Lane in Kundalahalli. It isn't the easiest to find if you aren't looking for it, but the locals know where we are. We started out just wanting a spot to cook and it grew into this. Every morning starts with unloading the supplies. The bags are heavy and the sun is usually already beating down on the lane. We spend a lot of time prepping in the kitchen before the first person even walks in. The floors get swept a dozen times a day because of the dust from the road. We have a few tables set up but most people just grab their stuff and head back to work or home. It gets really crowded around lunchtime. You can hear the pans clanking from the back and the smell of spices fills up the whole room. We try to keep up with the orders as they come in. Sometimes we get a bit behind when the rush hits all at once. It’s just the three of us back there doing the cooking and cleaning. We don’t use any fancy machines, just old pots and a lot of patience. The evenings are a bit quieter. We take that time to wipe everything down and get ready for the next day. It’s a simple life running a food spot like this. We just show up, do the work, and go home to sleep.
