Malabar

We are set up at number 40 on the Jeevan Bhima Nagar Main Road. It is a fairly basic operation we have going here. We have been in this specific spot for quite a few years now, just watching the buses and the rickshaws go past the window all day long. The kitchen is where most of the action happens, and it is usually pretty loud with the sound of the exhaust fans and pans clattering. We didn't bother with any fancy decorations or soft lighting. We just have regular tables and chairs and enough light so you can see what is on your plate. Most of the guys working here are from the same area back home, so there is always a lot of talking in our own language in the back room. We focus on getting the plates out fast and hot. It is a lot of work, especially when the lunch hour hits and the office workers from the nearby buildings all arrive at the same time. We don't have a big philosophy or a mission statement. We just cook the food we know how to make. The floor needs a lot of sweeping because of all the dust that comes in from the main road, but we try to keep it tidy. We are just a local spot for a quick meal. In the evenings, things slow down a bit and we sometimes have time for a tea.
