This KFC is right at number 67, opposite the Appanayya Layout in Banaswadi. If you know the SMR Castle, you know exactly where we are located. It is a busy spot in Bangalore 43, especially in the evenings when everyone is headed home from work. The crew here starts early to get everything ready for the lunch rush. It is not a quiet job by any means. There is always the sound of the fryers and the beeping of the timers in the back. We spend most of our time making sure the tables are wiped down and the floors are not slippery, which is a constant battle during the monsoon season. The people who come in are usually from the neighborhood or students looking for a quick bite. We do not have much of a view, just the main road and the traffic that never seems to stop. Working here is mostly about keeping the pace and making sure the orders go out without too much of a wait. Sometimes the delivery drivers are all lined up outside, and it gets a bit chaotic. But we have a good rhythm going. It is just a bunch of us working shifts, trying to keep things organized in a place that stays open late. You get to know the regulars who stop by every Friday night. It is a basic setup, but it keeps us busy from morning until the doors finally lock up for the night.
