People usually find us by the smell of the charcoal before they even see the sign over in Jayanagar 9th Block. It gets really smoky around here in the evenings, especially when the wind picks up near Navrangpura. We’ve been at 1548 for a long time now, and the tiles on the floor are starting to show it, but the grills keep going. My cousin and I started this because we liked eating more than anything else. Most days it is just a lot of chopping onions and making sure the meat stays tender. It isn't a fancy place where you sit for hours on soft chairs. You come in, you get your rolls or your plates, and you eat while it is hot. Sometimes the line gets out the door and people start complaining about the wait, but we just keep the skewers turning as fast as we can. The noise from the street mixes with the sound of the fans inside. We don’t have any fancy decorations or a marketing team telling us what to say. It is just food, mostly. If you live around here, you probably know the guys behind the counter by name. We don't change the menu much because people like what they like. It’s a bit of a squeeze when the college kids show up after class, but we make it work somehow. Just a regular shop doing what it does every day.
