Our restaurant is located at Domlur 409, which is a street that gets a lot of traffic during the work week. We start our day really early in the morning, usually before the sun is even up, so we can get the big pots of rice and lentils started. The kitchen is small but we have everything we need in there. We use a lot of stainless steel plates and tumblers because they last a long time and are easy to scrub clean in the sink. The walls are painted a plain color and we have some fans on the ceiling to keep the air moving when it gets hot in the afternoon. Most of the people who come here are workers from the nearby offices who just want a quick lunch that tastes like what they would have at home. We don't have a big menu, just the same things we make every day. Sometimes we run out of certain items by two o'clock, so we have to tell people we're closing up for a bit before the dinner shift. We take turns wiping the tables and sweeping the floor. There is a small counter where people pay, and we keep a bowl of fennel seeds there for them to take on their way out. It’s a basic place and we just try to keep the food hot and the service moving along. We spend our evenings getting the vegetables ready for the next day.
