Goli Vada Pav

Goli Vada Pav is tucked away over at Mathikere 5th Cross on Hutchins 2. It is not the easiest place to find if you aren't looking for it, but the people who live nearby know where we are. We spend most of the morning frying things up and making sure the buns are ready. The kitchen space is pretty tight, so we have to stay organized or we end up bumping into each other. There is a lot of oil used here, so everything has a bit of a slick feel to it no matter how much we scrub the counters at night. The 5th Cross can get pretty crowded with parked scooters, making it hard for cars to get through sometimes. We have a small counter where people stand to eat, and it usually gets covered in crumbs by mid-afternoon. We don't have a lot of staff, just a couple of us doing everything from taking the money to bagging the food. The fan on the ceiling wobbles a little when it is on the high setting, but it keeps the air moving at least. It gets busy after school lets out because the kids come by looking for a snack before they go home. We just keep the stove going until the last bit of batter is gone for the day. It is a simple setup and we like it that way.
