Our shop is on Dhobi Galli in Richmond Town, at number 17. It’s a narrow street and things can get pretty cramped when cars try to pass each other. We’ve been in this spot for years. The walls are a bit stained from the smoke of the charcoal, but that’s just how it is when you cook this way. We spend hours every afternoon skewering meat and getting the fires ready. By the time evening comes, the whole lane is filled with smoke and smells. People stand around on the street eating because we don't have much room inside. It’s a very casual vibe. You’ll see people from all walks of life leaning against their bikes or cars with a roll in their hand. We don't use fancy packaging, just some paper and a rubber band to hold it all together. The guys in the kitchen move fast, flipping things over the heat with bare hands almost. It’s impressive to watch if you aren't used to it. We close up late, usually after the last customer leaves. Cleaning the soot off the counters takes a long time every night. We don't have a website or anything like that. If you want to find us, you just have to come down to the galli. It’s a simple operation and we like it that way. We just keep doing what we know how to do for the neighborhood.
