Working at Expo Masala means you go home smelling like coriander and turmeric every single day. We are located in ITI Layout on J B Road, occupying the space at 469/501. It is not a very fancy building, just a solid place where we handle the grinding and the packing. The air inside is often thick with the smell of dried chilies, which makes everyone sneeze when we open the big bags from the market. We have a few heavy machines for the grinding, and they make a lot of noise throughout the morning hours. My hands are usually stained a bit yellow from the powders, and no matter how much I wash them, the scent stays. We spend hours weighing out small portions and heat-sealing the plastic packets. The floor is always a bit dusty despite us sweeping it three times a day. We keep the different masalas in large bins before they get put into the smaller retail bags. It gets busy on weekends when people from the layout come by to get their supplies for the week. The back room is where we store the raw seeds and dried pods in gunny sacks stacked high against the walls. There is a small desk near the front door where we keep the bills. It is a simple operation, really. Just a lot of manual work and making sure the machines don't get jammed up with the harder spices. We just focus on getting the bags filled.
