Egg Curry

We started Egg Curry here in Vadodara quite some time ago. It is located on New Sama Road in the BTM 2nd Stage area, right at number 93. Most of our days are spent just cracking eggs and getting the pans ready before the morning rush starts. It gets quite busy here, especially when folks are heading home from their jobs in the evening. We do not have any fancy chairs or air conditioning to speak of. The stove pretty much runs all day long. Sometimes it gets really hot in the kitchen, but that is just how it goes in this business. People seem to find us easily enough since we are near the corner. We spend a good amount of time cleaning up tables after the lunch crowd leaves. It is a small spot, nothing too big. My brother usually helps me out with the orders. We get our eggs delivered fresh every single morning. Some of our regulars come by just to chat for a bit while they wait for their food. We have been at this address long enough that most of the neighbors know us by name now. It is not a massive operation. Just a simple kitchen and a few spots for people to sit down for a minute. We mostly focus on getting the food out fast so nobody has to wait too long on their break. The street outside can get really noisy with all the traffic passing by. Vadodara has plenty of places to eat, but we just stay here doing our thing day after day. We like the neighborhood.
