Down here at 162 Kempe Gowda Nagar Panchawati Society, Sudarshan Nagar, we’ve got our catering base set up. It’s a local operation, mostly just us and a few hands helping out when the weekend weddings or parties start piling up. We spend a lot of our time checking lists and making sure we haven't forgotten the salt or the specific spices a client asked for. The kitchen gets really cramped when everyone is chopping vegetables at the same time. We’ve been in this part of Sudarshan Nagar for a bit, so we know the shortcuts to avoid the traffic when we’re delivering the food. It’s a lot of physical work, lifting heavy bags of rice and crates of vegetables every morning. Sometimes the stove acts up or a delivery is late, and we have to scramble, but that’s just the life of a cooking contractor. We don’t do much advertising; mostly people just hear about us from their neighbors in the society. We like keeping it simple. Our focus is just on the pots and the fire. When a job is done and the kitchen is finally scrubbed clean at night, we just sit outside for a minute before heading home to do it all again tomorrow. It is hard work but it keeps us busy and pays the bills. We don't need much more than that in this life. We enjoy the process of feeding people.
