You will find our kitchen over in R T Nagar at building number 1285 on 3rd Cross. We are in the New Kavalvyrasandra area, which is right near the Ambedkar Medical College Layout. It’s a very busy neighborhood with students and hospital staff always moving about. Our place is mostly used for the big-scale cooking we do for catering. We have large burners and massive pots that are almost always in use. The morning starts very early for us, usually before the sun is even up, so we can get the rice and vegetables started. It’s a noisy place with the sound of knives on chopping boards and the exhaust fans running constantly. We don’t have a fancy storefront or a place for people to sit down and eat. Most of our work is behind the scenes, getting food ready to be transported to different venues. The streets around here can be quite narrow, so moving our delivery vehicles in and out takes some skill. We are just a local group of cooks and helpers trying to get through the daily orders. It gets quite hot in the kitchen, and there’s always a rush to meet the delivery deadlines. We don’t use any complicated systems, just old-fashioned hard work and making sure the food is packed correctly before it leaves the door. Sometimes the floors get slippery from all the washing, but we keep moving.
