We’ve been here at Kundalahalli 74 for a while now. It’s not a fancy place with velvet chairs or anything like that. Most days start at five in the morning because the masalas need to be ground fresh. If you walk by Andhra Flavour around then, you’ll probably sneeze from the chilies. The kitchen gets really hot by noon, and that is just how it is. We have these old metal tables that have seen better days. People come in, eat their rice and pappu, and head back to work. Some are in a hurry, others just sit and stare at the wall for a bit. We don't really do the whole smiling waiter thing much, we just get the plates out. The floor gets a bit slippery sometimes when it rains outside. It’s just a regular spot in the neighborhood. We handle a lot of parcels too. Sometimes the delivery guys are shouting and it gets a bit chaotic. You learn to live with the noise of the traffic right outside the door. There isn't any secret to what we do, we just cook what we know. The menu hasn't changed in years because people seem to like what’s already there. We keep the lights a bit dim to save on the bill. It's just a business like any other on this street, trying to keep things moving. We close up when the food runs out, which usually happens by nine.
