Running Adigas Fast Food Pvt Ltd here in Jayanagar is a lot of work. We are up on the 1st floor at #691 on the 1st Main, right where 47th Cross cuts through the 8th Block. Most days start pretty early because the morning crowd around here doesn't wait for anyone. You can see the street from the windows upstairs, and it is usually packed with people heading to work or finishing their morning walks. The stairs can be a bit of a climb if you are in a hurry, but once you are up here, it’s a bit away from the direct dust of the main road. We keep the fans running most of the time because it gets warm by midday. There’s always the sound of steel plates clinking and people shouting out orders over the noise of the traffic outside. It isn't a quiet place, but that’s just how it is in this part of town. Sometimes the delivery trucks block the lane for a bit, and everything gets backed up, but we just keep going. We don’t have fancy chairs or anything, just the usual stuff that works for a quick bite. Most of our regulars know exactly where to stand and where to wait. It gets a bit chaotic around lunch, but the staff knows the routine well enough by now. We just try to get the food out fast and keep the tables reasonably clean for the next person coming in.
