We are over at Flat 131A in the DDA New Janta Flats area of Shivaji Enclave. It's a busy little spot in New Delhi, specifically in the extension part. Most people around here know the building, it’s not hard to find once you get into the lanes. We handle everything from this small space. There is always something cooking or someone packing up a delivery. It gets a bit crowded sometimes with all the supplies coming in and out, but that is just how things go here. We started this because we wanted a place to make food that people actually want to eat every day without it being too much of a fuss. The kitchen isn't huge but we make it work. Usually, you will find a couple of us moving between the counters and the stove. We spend a lot of time checking the ingredients that come from the local market. It is mostly about getting the orders right and making sure the food is hot. The neighborhood is mostly residential, so we see the same faces often. Being in a DDA flat means we are right in the middle of things, which helps when we have to get stuff delivered quickly. There isn't any fancy decor or a big lobby. It’s just a practical setup for making food. Sometimes the heat in the kitchen gets to us during the summer months in Delhi, but we just keep the fans going and get on with the work.
