Goli Vada Pav

We are over in Bhojubeer at Gilat Bazar. Our address is S2/345, which is right near the Varanasi Tehsil and Trimurti Hospital. Because of the hospital and the government offices, there is always a crowd. Varanasi is a city where people are always on the move, and Bhojubeer is no different. We started this little spot to give people a quick bite while they go about their business. It’s a small space, mostly just enough to get the work done. The noise from the traffic outside is constant. Sometimes it’s hard to hear ourselves talk. We see doctors, patients' families, and clerks from the Tehsil every single day. It’s a mix of all kinds of people. We don't have fancy seating or a big menu. We just make our vada pavs and keep them ready. The humidity here can be tough, but the shop stays busy enough that we don't think about it much. We’ve been at this Gilat Bazar location for a while now. People know us as the place near the hospital. It’s a basic setup. We just try to get the orders out fast because everyone is usually in a rush to get back to their work or their appointments. That’s just life in this part of Varanasi. We don't spend money on advertising or anything. People just find us by walking past. It's been that way for years. We just keep serving.
