You can find us at Shop No 1 in Rajnagar, right there on Tulsidham Road near the Blue Lagoon Hotel. It’s a ground floor and first floor setup where we handle everything. It’s usually pretty loud outside because of the traffic moving through Anjalpur. We spend a lot of time in the kitchen area getting things ready for the day. Making vadapav sounds easy, but there is a lot of chopping and boiling that happens before the first customer even shows up. We started this place because we wanted to work for ourselves. Mohan Sayaji More is the name on the papers, but mostly we are just a small group of people trying to keep things running. The shop is tucked into a busy spot, so we see all sorts of people walking by. Sometimes the weather makes it tough when it’s too hot near the stoves, but we just keep the fans going. We don’t use any fancy machines, just the basic stuff that works. Our days are mostly about the smell of spices and the sound of the deep fryer. It’s not a big corporate chain with manuals and uniforms. We just wear what’s comfortable and get the work done. People come in, grab a bite, and head back to their jobs. We like the local feel of the neighborhood and the familiar faces we see every week. It is just a normal food shop.
