Dayro Kathiyawadi Restaurants is located out on National Highway 8 in Limbdi, Surendranagar. Being on the highway means we see all sorts of people, from truck drivers to families going on vacation. It’s a very open and dusty environment because of all the vehicles passing by at high speeds. We focus on Kathiyawadi food, which is what this region of Gujarat is known for. It’s the kind of food that’s meant to be eaten after a long day of work. The restaurant itself is very simple. We have some wooden tables and the chairs are just basic plastic or metal ones. It gets very hot in the afternoons, so we have plenty of open space to let the breeze in, even if it brings some dust with it. You won't find any soft music or dim lighting here. It’s bright and loud. The kitchen has big pots of dal and vegetables simmering away. We use a lot of spices, and you can definitely smell it from the parking lot. We have a lot of space for cars and trucks to pull over, which is why people stop here. It’s not a place where you linger for hours, you just come in, eat some spicy food, drink some buttermilk, and get back on the road. My family and I run the place and we are usually around if anyone needs anything. It’s just how highway life is.
