Our place is right on the Varachha Road Main Road. It is one of those busy streets where there is never a quiet moment. Sapra Pendawala has been a part of this street for a long time now. We spend our days working with milk and sugar, mostly. It is a slow process because you cannot rush the cooking if you want things to turn out right. We have a routine that we follow every single day, starting with the delivery of fresh ingredients early in the morning. The shop is small and the walls are a bit plain, but we do not really mind. We are more focused on what is happening on the stove. Usually, there is a sweet smell hanging around the entrance, which is how most people notice us. We see a lot of regulars who stop by on their way home from work. They do not usually stay long, just long enough to get what they need and have a quick chat about the weather or the traffic on Varachha Road. It gets pretty hot inside because of the large vats we use, so we usually keep the fans running at full speed. It is honest work and it keeps us on our feet. We are not trying to be the biggest shop in town; we just want to keep doing what we have been doing for years. Every day is pretty much the same, and we like it that way.
