Over here at Plot No 553 in Chara Mandi, Najafgarh, things get started very early. Radhey Radhey Paneer Bhandar is mostly about the fresh stuff. We deal with paneer every single day. The smell of the dairy is something you just get used to after a while. It’s a busy area, especially with the mandi nearby. There’s always trucks and carts moving around, and the dust can be a bit much, but we keep our place as tidy as we can. People come here because they want paneer that hasn't been sitting in a fridge for a week. We make it, we sell it, and that’s the whole cycle. It’s not a fancy shop with air conditioning or glass counters. It’s more of a functional space where the work happens. Sometimes the supply of milk is a bit tight, or the prices change, and we have to explain that to the regulars. Most people understand because they’ve been coming to us for a long time. My hands are usually busy with something, either weighing blocks of paneer or cleaning up the counters. Najafgarh is a tough place to work sometimes because of the traffic, but the people are good. We don't spend money on ads or anything like that. If the paneer is good, people come back. That’s really all there is to it for us. We just keep doing what we do every day and hope the customers are satisfied with what they take home.
