We’re located in the Flatted Factory Complex in Okhla, at A 6. It’s an industrial area, so there’s always noise and trucks moving around outside. Not the prettiest place, but we have plenty of room for our equipment. We spend most of our time getting food ready for companies around here and some private events. The kitchen is always hot, especially in the summer months, but we’re used to it. We started out small and just stayed in this spot. It’s practical for getting to different parts of the city. We have a few regular guys who have been with us for years, they know exactly how much salt or spice to put in without even looking. Sometimes we run out of ingredients and have to rush to the local market, which is always a bit of a mess. We don't really do the whole fancy advertising thing. Most people find out about us by word of mouth or because they work in the same complex. We make a lot of different dishes, mostly stuff people want for their lunch breaks or for office gatherings. It's a lot of cleaning up too, scrubbing those big stainless steel tables at the end of the shift. It’s honest work and it keeps us busy from morning until late. You get used to the smell of onions and oil on your clothes. We just focus on the cooking part and nothing else.
