We run our place on Kalimandir Road and we handle both the tent side of things and the cooking. Having both services under one roof keeps us pretty tired most of the week. In the morning, half of us might be out setting up a bamboo frame for a tent, while the other half is at the shop peeling sacks of onions. It is a lot to manage, but we have a rhythm down now. The kitchen area is where we spend a lot of time, especially when there is a big order for a party. We use big coal or gas stoves that throw off a lot of heat. On the tent side, we have different colors of cloth and various types of chairs, from the basic plastic ones to the ones with covers. Kalimandir Road is a good spot for us because people know where to find us. We don't really do much in the way of marketing. Usually, people just see our name on the side of the truck or someone tells their cousin about the food we made for their last event. We try to keep the equipment clean, but it's tough when you're working in the dirt and rain. We just keep our heads down and do the work that needs doing. It’s a family-run kind of thing, and everyone pitches in when it gets really busy during the peak season. We take pride in just getting the job finished and moving on to the next one.
