It’s a residential area, so we try to keep the noise down, but the smell of baking croissants usually gives us away. We have been working in this space for a while now. The kitchen isn't massive, but it has enough room for our dough mixers and the ovens. Making croissants takes a lot of time because of all the layering of butter and dough, so we spend a lot of our day just waiting for things to chill or rise. It’s a slow process that you can't really rush. We often have flour on our aprons and butter on the door handles. It’s just how it goes when you’re working with pastry all day. We use a lot of parchment paper and have stacks of trays everywhere. The light in the flat is actually pretty good in the afternoons, which makes the packing part of the job a bit nicer. We aren't a big commercial factory with assembly lines. It’s just a few of us rolling dough by hand and checking the timers on the ovens. Sometimes a batch doesn't turn out perfect, and we just eat those ourselves. It is a quiet, steady kind of work and we are happy staying small. Sometimes we run out of space for all the flour bags we have to order.
