Our place is Cocoa Cakes F&B Services Llp, and you can find us over in the Industrial Estate in Mundhwa. We are at units 72 to 76. Being in an industrial area means there is always noise from the nearby shops and trucks moving around constantly. It is a bit dusty outside, but inside we keep it as clean as we can for the baking. We spend most of the day surrounded by the smell of cocoa and sugar. It’s a lot of manual work, lifting heavy bags of flour and making sure the ovens are at the right temperature. Sometimes the power fluctuates, which is a real pain when you have cakes in the heat, but we have gotten used to the quirks of the Mundhwa grid. We aren't some massive factory, just a group of people working together in this part of Pune. We have a few tables for packing and a big sink that seems to be always full of bowls. The floor is concrete and our shoes usually have a bit of flour on them by noon. It's a practical setup. We get the orders in, we bake them, and then we figure out the delivery routes. It is straightforward work. No one here wears a suit. We just put on our aprons and get to it every morning before the sun gets too high and the city gets too loud. It is just a basic, busy bakery operation.
