Bikaner Mithaiwale

Running a shop at Swargate 501 means things are always moving fast. Bikaner Mithaiwale is right in the thick of it. We get people coming off the buses or just walking through this part of town all day long. It stays noisy outside, but we just focus on what’s on the trays. We make a lot of different things, from the spicy bhujia to the sweet rasgullas. The kitchen in the back is where most of the work happens. We use big iron pans and heavy spoons. It gets hot back there, especially in the summer months. I usually sit near the front counter near the door. The tile on the walls is a bit dated now, but it’s easy to wash. We don’t have fancy seating, just a few spots where people can stand and eat a quick samosa before they head back out to the street. Most of our regulars are folks who work in the nearby offices or live just down the lane. They know us by name and we know what they usually like to buy. Every morning we check the stocks and see what needs making for the day. If the milk delivery is late, we just wait and start when it arrives. It’s a simple routine we’ve had for a long time. We just keep the door open and stay busy until the sun goes down and the lights on Swargate come on. The fan in the corner makes a clicking sound but it works fine for now. We like it here despite the noise.
