Bakers Lavazza is tucked away in the Camp area, near Sant Tukaram Nagar 1. It’s a bit of a walk from the main road, but we get plenty of people dropping by. Working in a bakery means you are always covered in a bit of flour. I usually get here while it’s still dark to get the ovens heated up. The heat can be a lot during the summer months, especially in that back room. We have some metal racks that are always full of trays and cooling bread. Sant Tukaram Nagar 1 is a busy little pocket of the city, so there is always someone passing by the window. Sometimes the dough doesn't rise exactly how you want it to, or a batch stays in the oven thirty seconds too long. That is just how it goes with baking. We aren’t trying to be a big chain or anything. It is just a small shop where we do everything ourselves. The coffee machine makes a lot of noise, and sometimes we have to kick it to get it to stop rattling. We don't have a big marketing plan. Mostly, the smell of the bread just brings people in. We keep our supplies in the back corner and try to keep things organized, though it gets messy when we are busy. It’s just us doing our thing every day, trying to stay ahead of the orders. We sweep up the crumbs at night and start all over again.
