Amarpali Curries

Being in Rajiv Nagar near the railway track, you get used to the sound of the trains going by at Amarpali Curries. It’s actually a nice rhythm for the day. Our place is in NRI Plaza on the Main Road here in Patna, 800013. I usually get in early to start the prep because making curries takes a lot of time if you want them to taste right. The kitchen gets hot, and the smell of spices usually drifts out onto the street. People walking by often stick their heads in to see what's cooking. It’s a simple setup, nothing too grand, just some tables and chairs and a counter where I spend most of my time. The NRI Plaza is a decent spot, though parking can be a bit of a headache for people sometimes. We see a lot of the same locals every day. It’s funny how food brings everyone together. I don't really have a big plan for the business; I just want to make sure the food is ready when the lunch rush starts. Some days we are busier than others, especially when there’s an event nearby. I handle most of the ordering and the bills myself. It’s a lot of small tasks that add up. Rajiv Nagar is a good neighborhood, and being close to the track gives us a landmark. You get to know the sound of the different engines after a while, and it tells you exactly what time it is.
