Lemon Twist is located at H 1A/16 in Sector 63, which is mostly full of office buildings and warehouses. Because of where we are, the pace is very different depending on the time of day. In the morning, it’s quiet and we are just getting the kitchen ready and setting up the tables. By lunchtime, the whole place fills up with people from the nearby offices who are all in a rush to eat and get back. The noise level goes from zero to a hundred in about ten minutes. We have these large windows that look out onto the dusty road, and you can see the trucks going past all day long. The floor is made of dark stone that hides the dust well, which is good because the construction nearby never seems to end. We have a couple of plants in the corner that we forget to water sometimes, but they seem to be holding on. The staff usually hangs out near the back door during breaks to catch a bit of a breeze. It’s not the fanciest setup, and some of the menu boards have hand-written corrections on them where we’ve run out of something. It’s a practical place for people working in Sector 63 to grab a meal without too much fuss. We have a few old fans that we use when the power for the AC goes out, and they make a lot of noise but they help a bit. Most days are just a cycle of prepping and cleaning.
