You will find Al Dente over at the Moti Bagh Food Court, specifically at stall number 8. Working in a food court is a bit different than having a standalone shop. It’s always noisy with the sounds of other kitchens and people talking at the shared tables. We have a very small kitchen space, so everything has to be kept very tight and organized or we can't move around at all. We spend a lot of time boiling water and chopping vegetables in that small space. It gets very hot behind the counter, especially during the lunch hour when everyone from the nearby offices comes down at the same time. We don't have any fancy waiters or tablecloths here. It’s just us handing over plates across the counter. Sometimes we run out of certain ingredients by mid-afternoon if it’s been an especially busy day. We don't have a big philosophy about food. We just try to make things the way we were taught a long time ago. The equipment is older, but it still works fine for what we need to get through the day. We see a lot of students and office workers who are just looking for a quick meal before heading back to their jobs. We don't do any big advertising. Most people just find us while they are walking through the food court looking for something. It’s honest work and it keeps us on our feet.
